Mero (Epinephelus marginatus)

El mero pertenece a la familia de los Serránidos del orden Perciformes  y es especialmente típico de toda la costa mediterránea. Se caracteriza por su cabeza grande y sus expresivos ojos.  Tiene el cuerpo robusto y macizo, y se le distingue por su color marrón con manchas amarilloverdosas. Tiene escamas profundas adheridas a la piel, y sus labios son negros y carnosos. Su aleta dorsal es larga y cuenta con 11 espinas.

En los últimos años, el número de meros en el Mediterráneo ha descendido considerablemente debido a su pesca. A pesar de este hecho, el mero es bastante común en Grecia, particularmente en las islas Espóradas (Skópelos, Alónissos), y en Creta. Puede llegar a pesar entre 35-40 kilos y mide entre 100 y 150 cm de longitud.

Su coloración puede variar dependiendo de la situación.  Cuando embosca a su presa en la arena, se vuelve de color blanco y difícilmente se le distingue. Es un pez solitario y habita en fondos rocosos y arenosos cerca de la costa. Su alimentación se basa fundamentalmente de cefalópodos (pulpos), crustáceos y pequeños peces.

El mero es un pez bastante apreciado por su suave y deliciosa carne. Las artes de pesca para pescar este pez son variadas, y también se adapta a distintas formas de elaboración; a la plancha, estofado, sin olvidar la maravillosa sopa que se prepara con él.

El mero, aunque parece un pez lento, puede llegar a sorprendernos con su velocidad, en caso de que decidamos darle caza y pescarlo.

Se puede observar al mero casi tocando el fondo del mar, muchas veces casi en posición vertical, moviendo sus aletas y nadando pausadamente. Es aconsejable aprovechar este momento de tranquilidad para darle caza.

En cualquier caso, puede encontrarlo en la pescadería del barrio o bien cocinada en cualquier taberna o restaurante que conozca, y que sepa que cuentan con pescado fresco y productos de primera calidad como sucede en la mayoría de las tabernas de Skópelos. Verduras como el tomate,  el calabacín, el perejil, la cebolla, la berenjena y  el pimiento se cultivan, por lo general, en huertos biológicos sin utilizar pesticidas ni abonos, dando a las comidas un sabor y un gusto irrepetible.
