Каменный окунь, более точно называемый темным групером, является одной из рыб, водящихся на каменистых участках средиземноморского дна. Внешне он выделяется своей большой головой и выразительными глазами. У него короткое и толстое туловище темно-коричневого цвета с желто-зелеными пятнами. Пластины чешуи вросли в его толстую кожу. Губы толстые и черные. Спинной плавник очень длинный и имеет 11 игл.
В Средиземноморье популяция каменного окуня сильно уменьшилась за последние годы из-за развитого рыболовства. Несмотря на это каменный окунь остается достаточно распространенным в греческих морях, в основном на Спорадах (Скопелос, Алонисос) и на Крите. Он может достигать 1-1,5 метров в длину и 35-40 килограмм веса.
Каменный окунь обладает способностью менять окраску в зависимости от окружающей его среды. Даже подкарауливая свою добычу на песке, он светлеет и становится трудноразличимым. Он живет исключительно на скалистом грунте рядом с береговой линией, где питается в основном моллюсками, в частности осьминогами, ракообразными и рыбами меньших размеров.
Каменный окунь является объектом активного лова из-за своего вкусного мяса. Существует много способов ловли каменного окуня и еще больше способов его приготовления.
Его запекают, тушат в луковой подливке и готовят из него превосходный суп.
(В ближайшее время мы разместим большое количество рецептов приготовления блюд из каменного окуня, поскольку это наша любимая рыба!)
Каменный окунь производит впечатление медлительной рыбы. Тем не менее, он поразит вас своим ускорением, если вы решите поохотиться на него!
Вы часто можете увидеть, как он завис чуть выше дна в почти вертикальном положении, распустив свои плавники, и спокойно наблюдает за вами. Этим спокойным поведением рыбы можно воспользоваться, чтобы подобраться к ней на расстояние выстрела.
В любом случае мы предлагаем вам заказать эту рыбу у местного рыбака или в любой таверне или ресторане, который снабжается свежей рыбой и экологически чистымипродуктами, как, впрочем, это и принято на Скопелосе. Помидоры, кабачки, петрушка, лук, баклажаны и перцы выращиваются здесь на биологически чистых плантациях без пестицидов и химических удобрений, даря нашей еде неповторимый вкус.
