Ενας καλός Ροφός

Υλικά

· 1 μεγάλο ροφό

· 5 κρεμμύδια ξερά και 2 κιλά κρεμμυδάκι στιφάδου

· 3 σκελίδες σκόρδο

· 8 ντομάτες

· 1 κουταλιά της σούπας ντοματοπελτέ

· αλάτι, πιπέρι, μπαχάρι

· δενδρολίβανο

· 2-3 φύλλα δάφνης

· λάδι

· 1 κούπα λευκό κρασί

Εκτέλεση

Καθαρίζουμε το ροφό. Πρώτα αφαιρούμε τα σπλάχνα, ξύνουμε τα λέπια και τον ξεπλένουμε .

Καθαρίζουμε και κόβουμε σε ρόδες τα μεγάλα κρεμμύδια.

Αφού ζεστάνουμε στην κατσαρόλα ένα ποτήρι λάδι, τα τσιγαρίζουμε μαζί με τα σκόρδα. Μόλις ροδίσουν, τα σβήνουμε με το κρασί.

Τρίβουμε τις ντομάτες από την χοντρή μεριά του τρίφτη και τις προσθέτουμε στο φαγητό. Ρίχνουμε τα μπαχαρικά, αλάτι, πιπέρι, μπαχάρι και 3-4 δαφνόφυλλα. Συνεχίζουμε βάζοντας 4 κουταλιές της σούπας ντοματοπελτέ και τα αφήνουμε να βράσουν.

Στη συνέχεια βάζουμε τα κοκάρια (μικρά κρεμμύδια) και τα αφήνουμε να βράσουν και αυτά 5 λεπτά.

Τέλος προσθέτουμε το ροφό, αφού τον χαρακιάσουμε, και τον αφήνουμε να σιγοβράσει για 45 περίπου λεπτά. Δε συμπληρώνουμε νερό γιατί θα βγάλει τα ζουμιά του.
